Mary Tabacchi, Ph.D.

Mary, professor Emerita, joined the School of Hotel Administration faculty in 1978, having previously taught in the division of Nutritional Sciences where she was a senior research associate in the division of Plant Sciences. She has a Ph.D. in biochemical nutrition, biostatistics, and is a well-respected author and researcher. Mary is a consultant for destination health resort development and menu engineering, corporate wellness programs, adventure tourism, healthful food menu design, and senior living facilities. She serves on the boards of The Global Wellness Summit, The Green Spa Network, and the Ronald McDonald House NYC. She is a member of the Academy of Science, Sigma Xi, and The Academy of Nutrition and Dietetics. Mary was an early innovator and founding member of the Cornell Institute for Healthy Futures, The International Spa Association (ISPA), and the New York Spa Alliance. Each year, ISPA honors her by giving a merit-based scholarship in her name to a college student. Mary taught Biochemical and Physiological Nutrition, Corporate Wellness, Spa Development, Healthy Cuisines, Food Chemistry, and Chemistry. Her hobbies are adventure hiking around the world, dancing with her husband, speed walking, and power yoga. Mary is an avid reader of science journals and fiction and non-fiction novels. She and her husband enjoy cooking together and belong to the National Geographic Life Long Explorers.
